I think this was the perfect lunch for a Tuesday.



turkey & cranberry sandwich
a small handful of baby spinach leaves, lightly rinsed
1 slice rye or whole wheat bread cut in half
1 slice turkey breast, cut in half
2 T cranberry sauce

Divide the spinach leaves between 2 halves of bread. Place turkey on top of spinach. Put 1 T of cranberry sauce on the turkey.



cottage cheese, ham, and apple sandwich
2 T cottage cheese
2 t freshly snippeed chives
1 slice lean ham, cut in half
1 slice rye or whole wheat bread, cut in half
1/2 apple, rinsed, cored, and thinly sliced

Mix cottage cheese with chives, season with salt and pepper. Put 1 half slice of ham on each half slice of bread. Spread with cottage cheese. Top with apple slices.
