my new fav salad



This is totally cleanse-worthy & delish. Mix a large or small handful [depending on your preferences] of each of the following in a ziploc bag: chopped white onion, tomato, black olives, spinach, chickpeas, grilled chicken & feta. Quick douse in olive oil + balsamic vinegar. Shake on a little salt. Grind in a little pepper. Shake it up & enjoy.

I love fresh tomatoes. This is one of my favorite dishes. And done with Whole Grain French Bread, it is hearty and satisfying. Did I mention this is also incredibly easy to make? This is my version of my mom's latest fave.   


6 ripe plum tomatoes
2 cloves garlic, pressed
1 Tbsp extra virgin olive oil
1 teaspoon balsamic vinegar
6-8 fresh basil leaves, chopped.
Salt and freshly ground black pepper to taste [this is important]

1 baguette French bread or similar Italian bread
olive oil to taste

1] Move oven rack to top position & preheat oven to 475 degrees.
2] Dice tomatoes. Mix tomatoes, olive oil, balsamic, garlic, basil, salt & pepper in a bowl.
3] Slice french bread into 1/4-1/2 in slices. Coat one side with olive oil. Place on cookie sheet and toast in oven until golden brown.
4] Serve. You can top bread with tomatoes prior to serving, just beware of it getting soggy.
